Ware washing equipment must be designed, constructed, and conveniently located for effective cleaning and sanitizing of equipment and utensils. A three-compartment sink with drain boards on each side or a mechanical ware washing machine must be provided.  Home-style machines are prohibited.

A chemical test kit must be provided to ensure the sanitizing agent is maintained at the correct concentration. 

To prevent contamination, three-compartment sinks are limited to ware washing only.
