Sanitization is the final step of the ware washing process. Sanitizing significantly reduces the amount of harmful organisms on a surface. If hot water is used, the surface temperature of the utensil, dish, or equipment must reach 160°F. Chemical sanitizers must be used in accordance with the manufacturer’s recommendations.
