Lighting levels must be sufficient to ensure employees can perform tasks such as:

  1. Reading labels.
  2. Recognizing color of substances.
  3. Identifying toxic materials.
  4. Recognizing the condition of food, utensils, and supplies.
  5. Conducting general food establishment operations.

Lights over exposed food, clean equipment, utensils, linens, and unwrapped single-service items must be equipped with a cover or a shatter proof lamp to prevent breakage.
