Lighting levels must be sufficient to ensure employees can perform tasks such as:
- Reading labels.
- Recognizing color of substances.
- Identifying toxic materials.
- Recognizing the condition of food, utensils, and supplies.
- Conducting general food establishment operations.
Lights over exposed food, clean equipment, utensils, linens, and unwrapped single-service items must be equipped with a cover or a shatter proof lamp to prevent breakage.
